In 1988, Todd Farmer started working for Queensland Prawn & Ice, one of the largest wholesaling companies on the Gold Coast. The company had various seafood outlets, including Hamilton Island and Fishermen’s Wharf, all of which employed Todd at some point. Within the same company, he opened and managed a seafood market at Sanctuary Cove. During this time, Todd was given the chance to work with some of the best fish filleters and oyster shuckers in the business, many of whom are employed by him today.
