Russell Bald is Dandenong Market’s classically trained and qualified resident chef with more than 18 years’ experience in a multitude of hospitality establishments from cafes, fine dining restaurants, hotels, resorts, corporate catering and function facilities. Russell has worked at restaurants such as Melbourne’s Florentino Restaurant, New Zealand’s Lagos Restaurant, Provence Restaurant in the Mornington Peninsula (where he worked as sous chef under Jacques Mielle), and the Salix Restaurant at Willow Creek Vineyard. Russell owned Manyung Cafe from 2001-05, has been the food services manager at Melbourne Business school, and was the food manager/trainer at Pragmatic Group from 2007-10. He is currently the owner of Mise En Place Hospitality Consultants, which includes a retail and wholesale pasta business, and oversees food event management for clients such as A Day on the Green at The Hill Winery, Geelong and Rochford Vineyard, Yarra Valley.
