A combination of National Trust classified buildings and a modern city, Hobart offers old-world charm and a palpable sense of history. Settled in 1803, Hobart’s sea trade and ship-building industry began to flourish in the 1830s around the warehouses of Salamanca Place. These buildings, including that which houses Rockwall, are amongst the most stunning sandstone Georgian warehouses in Australia. Rockwall bar + grill was established in November 2008 by well known local restaurateur Susan Catchpool and former Australian Rules footballer Garry Baker. Following his years with Melbourne Football Club and Footscray Football Club, Garry retired and settled in Tasmania, opening a number of pubs and restaurants in and around the city. Having worked in the restaurant trade for more than 20 years, Susan recognised Hobart’s need for an establishment which offers quality Tasmanian food in a relaxed environment. Susan and Garry joined forces with Paul Little, Max Forster and Australian Rules footy legend Ron Barassi—three like-minded mates who have joined Garry in trekking the Kokoda Trail and mountain-biking in Mongolia—resulting in the opening of Rockwall bar + grill Salamanca in late 2008 to local acclaim. Fast becoming a dining institution, Rockwall offers visitors and Hobartians alike, the opportunity to view history from the inside. This amazing warehouse has withstood the test of time and has been artfully outfitted to accommodate modern and relaxed dining.
The Rockwall Bar and Grill receives praise for its fabulous food, professional service, beautiful space, and top-notch dining experience. Tasmania is ideally situated to make malt whisky, and yet 150 years after the last licensed Tasmanian distillery closed its doors, it took a whisky lover to realise the environment was perfect. Bill Lark realised that that everything you need for a world-class whisky was in Tasmania - rich fields of barley, an abundance of wonderfully pure soft water, highland peat bogs, and the perfect climate to bring all the ingredients together in a marriage of science, art and passion. The vision of producing Tasmanian malt whisky was born on a trout fishing trip in the highlands of Tasmania. Bill's father in-law Max produced a wonderful bottle of single malt, and as they enjoyed a drink in the park at Bothwell, surrounded by Georgian buildings, barley fields and the gentle flowing of the Clyde River, Bill remarked to Max, "I wonder why there isn't anyone making malt whisky in Tasmania". Lark Distillery is a family affair. Lyn and Kristy Lark (Bill's wife and daughter, respectively) have played an integral part in growing the business. When Kristy joined the team as head distiller, she was one of the world's youngest female distillers. Women are known for their ability to distinguish flavours better than men and this superior talent in both Lyn and Kristy has given Lark products a notable edge. Today the Lark Distillery is one of Australia's leading distilleries, producing high quality, premium spirits using traditional time honored methods. T he Distillery runs a 1800 litre copper pot still along with a 500 litre spirit still, and produces ten to twelve 100 litre barrels per month. The range of distilled products includes the flagship Single Malt Whisky, Premium Vodka, Gin, and and TASI aromatica bush Liqueur.
Lark Distillery is highly regarded for its exceptional whiskeys and top-notch service. The knowledgeable and friendly staff contributes to an enjoyable and relaxing experience for guests. The atmospheres is wonderful and ideal for whiskey lovers. A variety of delicious tasting paddles are available, making it a must-visit in Hobart.
